Tequila comes from the Blue Weber agave, a succulent, sweet plant that looks like a cross between a pineapple and a cactus but is neither. They take 5 to 7 years to mature. Mescal is the wild cousin that, when cooked in a stone pit, gives it its smoky complexity.
